Drinking Tea Begins with Brewing Tea
by The Minister of Fire & Water
Preparing Hot Tea
Fill the kettle with fresh, cold water and heat to a rolling boil (almost to boiling for green tea).
Warm the teapot by swirling steamy water inside it. Pour it out.
Measure out about 1 level teaspoon (approximately two grams) of tea per cup. Place into the teapot or infusing basket.
Pour the water over the leaves, cover, and infuse to taste -- on average 3 to 5 minutes. Most green teas require a brief infusion, about 2 to 3 minutes; black and herb teas brew a bit longer, about 4 to 5 minutes.
Remove the infuser or use a strainer for the leaves. Pour into a cup and enjoy Sip by Sip.
"Even in a perfect cup there exists a hollow. It is the emptiness within it that makes it perfect. Without it how would we drink the tea?"

Preparing Iced Tea
Fill the kettle with fresh, cold water and heat to a rolling boil (almost to boiling for green tea).
Measure two level teaspoons of tea per cup. Place into the teapot or infusing basket, into the Little Dipper mesh infuser, or into the built-in infuser of our full leaf tea mug.
Pour the water over the leaves, cover, and infuse to taste - on average 3 to 5 minutes. Most green teas require only a brief infusion, 1 to 3 minutes; black and herb teas brew a bit longer.
Remove the infuser. Allow the tea to cool to room temperature. Serve over ice.
