Drinking Tea Begins with Brewing Tea

Preparing Hot Tea
Fill the kettle with fresh, cold water and heat to a rolling boil (almost to boiling for green tea).
Warm the teapot by swirling steamy water inside it. Pour it out.
Measure out about 1 level teaspoon (approximately two grams) of tea per cup. Place into the teapot or infusing basket.
Pour the water over the leaves, cover, and infuse to taste --
on average 3 to 5 minutes.
Most green teas require a brief infusion, about 2 to 3 minutes; black and herb teas brew a bit longer, about 4 to 5 minutes.
Remove the infuser or use a strainer for the leaves. Pour into a cup and enjoy Sip by Sip.
Preparing Iced Tea
Prepare a double strength infusion of hot tea (follow instructions above). Strain and cool to room temperature. Pour cooled tea over ice. Sip and smile.
