Steeping Instructions

Steeping green tea is easy. Simply heat fresh, filtered water just short of boiling. Then pour water over tea and steep for 1-3 minutes (if using a tea bag) or 2-4 minutes (if using full-leaf tea.)

When I was a young girl my mom would take me to a particular book seller that housed a particular coffee shop that sold Republic of Tea Spring Cherry. She would buy a book for me, we would purchase cups of tea, and settle into the furniture in front of the fireplace to read. I’ve loved this tea since, for over 20 years. A few years back I couldn’t find it anywhere and was told it had been discontinued. Then one day it appeared. Ever since I purchase it in bulk and store in the freezer. I love the sweet crispness of Spring Cherry tea and I love the memories each cup invokes.

This tea sounded so good I couldn't resist even though I have a kitchen cabinet full of tea already. I wanted spring to come, and this helped me through the last cold days of Covid-19 March. When I brewed it, the room filled with the sweet smell of cherries. I didn't think it could possibly taste as good as it smelled, but yes, yes it does. I was absolutely surprised at the first sip. This tea does take a little finesse, though. You don't want to pour boiling hot water over it (take the kettle off a little before, about the time you see small bubbles) and you don't want to steep it too long or you can have some lingering bitterness. About 3-4 minutes will do. Before you drink, breathe deep and savor the smell. I guarantee you'll smile and think it's spring, no matter the time of year. Stay safe!

Only good things! Just the smell of the dry tea is sweet and reminiscent of a cherry ice cream from my childhood days. Once brewed it takes on a different memory from the aroma coming out of the cup. Sweet, soft, warming. It’s more than just the flavor.
