Chai Egg Nog

Servings: 3

Ingredients:
3 large egg yolks
¼ cup granulated sugar
½ cup heavy whipping cream
1 cup milk
6 Republic Chai tea bags
Pinch of salt

 

Directions:

Whisk yolks and sugar in a medium bowl until creamy. In a saucepan over medium-high heat, steep tea bags in cream and milk. Add salt and stir often until a bare simmer. Remove tea bags and add a big spoonful of the hot milk to the egg mixture, whisking vigorously. Repeat one spoonful at a time to temper the eggs. Then, pour the mixture back into the saucepan on the stove. Whisk constantly until the mixture is just slightly thickened then remove from heat. Strain through a fine mesh into a pitcher and cover with plastic wrap. Refrigerate until chilled. It will thicken as it cools. For a thinner consistency, add to a blender with a splash of milk and blend until smooth. Serve with whipped cream and a cinnamon stick, if desired. Enjoy, Sip by Sip!
