Witches’ Brew – Matcha Mocktail

This matcha mocktail utilizes the bartender’s trick of adding egg whites or aquafaba to a drink to create a delicious and dense layer of foam on top. This layer of foam is the perfect place to place a float Halloween-themed mocktail garnish. Perhaps a sour gummy worm, sprig of rosemary, or jelly eyeball? Get creative with your magic potion toppings. This tea mocktail is an excellent alcohol-free option for your next Halloween bash. Matcha Mocktail Recipe


- 1 teaspoon matcha powder

- 1 ounce of warm water

- 3 ounces non-alcoholic ginger beer or ginger ale

- 2 ounces fresh squeezed lemon juice

- 1 ounce simple syrup

- 1 egg white or 2 tablespoons aquafaba

- Ice


1. In a small bowl whisk together the matcha powder and warm water until the matcha is
fully incorporated and there are no lumps.

2. Pour ginger beer into a chilled coupe cocktail glass.

3. In a cocktail shaker with ice combine lemon juice, simple syrup, matcha mixture and egg
white or aquafaba. Shake vigorously for 1 minute or until frothy.

4. Strain mixture onto the ginger beer in the cocktail glass. Use a spoon to top with any
foam remaining in the cocktail shaker while being mindful to keep any ice out of the
coupe glass.

5. Float a garnish on the foam of your Witches’ Brew. Perhaps you will choose to top your
drink with some playful Halloween candy like sour gummy worms or chocolate spiders or
you can opt for a sophisticated lemon twist or sprig of rosemary.
